Ingredients
- 3 medium potatoes, unpeeled, parboiled and cut into 1 inch pieces
- 5 tablespoons mustard oil
- 3 small onions, quartered and layers separated
- 4-5 green chillies
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon asafoetida
- 2 bay leaves
- 2 half inch cinnamon sticks
- 2-4 cloves
- 1 dried red chilli
- 1 medium onion, finely chopped
- 5-6 garlic cloves, chopped
- 1 medium tomato, finely chopped
- Salt to taste
- 1/2 teaspoon turmeric powder
- 1/2 tablespoon coriander powder
- 1 1/2 teaspoon red chilli powder
- 1 tablespoon chopped fresh coriander leaves
Method
- Heat 3 tbsps mustard oil in a non-stick pan till it begins to smoke. Add potatoes and sauté for 2 minutes.
- Add quartered onions and green chillies, mix and sauté for 2-3 minutes. Transfer them into a bowl.
- Heat remaining mustard oil in the same non-stick pan till it begins to smoke. Add cumin seeds, mustard seeds, asafoetida, bay leaf, cinnamon stick, cloves and dried red chilli, mix and sauté till fragrant.
- Add chopped onion and garlic, mix well and saute till golden brown. Add tomato, mix and sauté till pulpy.
- Add salt,Turmeric Powder, coriander powder and red chilli powder, mix well and saute for 1 minute. Add ¼ cup water, mix well, cover and cook for 3-4 minutes.
- Add the potato-onion mixture, mix and cook for 1 minute. Add coriander leaves and mix well. Cover and cook for 1-2 minutes.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
