Kadhi

Kadhi recipe is a Hyderabadi version of making dahi ki kadhi recipe which is made by using dahi/ thick yogurt and mixing chick pea flour/besan into it. This is a Sanjeev Kapoor exclusive recipe.

Ingredients    

  • ½ cup yogurt
  • 1 tablespoon gram flour
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 3-4 cloves
  • 1 inch cinnamon stick
  • 6-8 curry leaves
  • 2-3 dried red chillies
  • 2-3 green chillies, slit
  • ½ teaspoon fenugreek seeds (methi dana) 
  • ¼ teaspoon asafoetida (hing)
  • 1 teaspoon sugar
  • Salt to taste

Method

  1. Take yogurt in a bowl, add gram flour and 1 ½ cups water and whisk till smooth. Set aside.
  2. Heat oil in a deep pan, add mustard seeds, cumin seeds, cloves, cinnamon stick, curry leaves, dried red chillies, green chillies slit, fenugreek seeds and asafoetida and sauté for a few seconds. 
  3. Slowly pour yogurt-gram flour mixture into the pan and whisk continuously. Cook for 1-2 minutes.
  4. Add sugar and salt and mix. Cook for 15-20 minutes on low heat, stirring in between. 
  5. Take the pan off the heat and serve hot.
