Ingredients
- 2 medium green apples
- 2 medium red apples
- 1 medium carrot , peeled and cut into 1 inch thin strips
- 15-20 fresh mint leaves
- 12-15 pecan nuts
- a few Romaine lettuce
Dressing
- 2-3 tablespoons yogurt
- 3-4 tablespoons poppy seeds (khuskhus/posto) , soaked for 15-20 minutes
- 2 tablespoons honey
- 2-3 tablespoons apple cider vinegar
- Salt to taste
- Crushed black peppercorns to taste
Method
- To prepare dressing, put drained poppy seeds, yogurt, honey, apple cider vinegar, salt and crushed peppercorns into a jar and blend with an electric hand blender till smooth.
- Quarter the green apple and red apple, remove the core, dice and transfer into a bowl.
- Add carrot strips, mint leaves, pecan nuts, 1-2 torn romaine lettuce leaves and
dressing and toss well. - Serve immediately.
