Apple Yogurt Salad

Ingredients 

  • 2 medium green apples
  • 2 medium red apples
  • 1 medium carrot , peeled and cut into 1 inch thin strips
  • 15-20 fresh mint leaves
  • 12-15 pecan nuts
  • a few Romaine lettuce

Dressing

  • 2-3 tablespoons yogurt
  • 3-4 tablespoons poppy seeds (khuskhus/posto) , soaked for 15-20 minutes
  • 2 tablespoons honey
  • 2-3 tablespoons apple cider vinegar
  • Salt to taste
  • Crushed black peppercorns to taste

Method

  1. To prepare dressing, put drained poppy seeds, yogurt, honey, apple cider vinegar, salt and crushed peppercorns into a jar and blend with an electric hand blender till smooth.
  2. Quarter the green apple and red apple, remove the core, dice and transfer into a bowl.
  3. Add carrot strips, mint leaves, pecan nuts, 1-2 torn romaine lettuce leaves and
    dressing and toss well.
  4. Serve immediately.
