Ingredients list for Bean Sprout Kadhi

  • 1 cup Moong Sprouts blanched
  • 1 cup Yogurt blanched
  • 2 cups Yogurt
  • 3 tablespoons Gram flour (besan)
  • 1/2 teaspoon Red chilli powder
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 inch piece Ginger
  • 2 Green chillies
  • 2 tablespoons Oil
  • 5-6 Cloves
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 10-12 Black peppercorns
  • 2-3 Dried red chillies
  • 1/4 teaspoon Asafoetida

Method

  1. Whisk yogurt, a little water, gram flour, red chilli powder, salt, turmeric powder in a bowl till smooth.
  2. Grind ginger and green chilli with a little water and add and mix.
  3. Heat oil in a non stick pan, add cloves, cumin seeds, coriander seeds, black peppercorns, dried red chillies and asafoetida and sauté till fragrant.
  4. Pour in the yogurt mixture and cook, stirring continuously, till it comes to a boil.
  5. Reduce heat and let it simmer till the kadhi thickens.
  6. Add moong and moth sprouts and mix well.
  7. Serve hot with steamed rice or parantha.
