Ingredients list for Anda Dal Tadka - SK Khazana
- 4 Eggs
- 3 cups Cooked dal
- 3 medium Onions chopped
- 5 tablespoons Fresh coriander leaves chopped
- 2 Green chillies chopped
- to taste Salt
- 1 tablespoon Oil
- 2 tablespoons Butter
- 1 tablespoon Garlic chopped
- 1/2 tablespoon Ginger chopped
- 2 Red chillies
- 1 large Tomato chopped
- 3/4 teaspoon Red chilli powder
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Garam masala powder
- 1 teaspoon Dried fenugreek leaves (kasoori methi)
- for garnish Fresh coriander sprigs
Method
- Break the eggs into a bowl, add 1 onion, 2 tbsps coriander leaves, 1 green chilli and salt and whisk well.
- Heat oil in a non-stick pan, add butter and let it melt. Add garlic, ginger and remaining green chillies, mix and sauté for 1-2 minutes or till the raw smells disappear.
- Add red chillies, mix and sauté for 30 seconds. Add remaining onion, mix and sauté till golden brown.
- Add tomato and salt, mix and sauté till tomatoes become pulpy.
- Reduce heat, add red chilli powder, turmeric powder and garam masala powder, mix and saute for 1 minute.
- Add the egg mixture and cook, stirring continuously, for 2 minutes. Add dal, mix well, and cook for 2-3 minutes.
- Add remaining coriander leaves. Crush kasuri methi and add and mix well. Let the mixture come to a boil.
- Transfer into a serving bowl, garnish with coriander sprigs and serve hot.
