You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Dal Tadka - SK Khazana Recipe

  • Eggs 4

  • Cooked dal 3 cups

  • Onions chopped 3 medium

  • Fresh coriander leaves chopped 5 tablespoons

  • Green chillies chopped 2

  • Salt to taste

  • Oil 1 tablespoon

  • Butter 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Ginger chopped 1/2 tablespoon

  • Red chillies 2

  • Tomato chopped 1 large

  • Red chilli powder 3/4 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Dried fenugreek leaves (kasoori methi) 1 teaspoon

  • Fresh coriander sprigs for garnish

Method

Step 1

Break the eggs into a bowl, add 1 onion, 2 tbsps coriander leaves, 1 green chilli and salt and whisk well.

Step 2

Heat oil in a non-stick pan, add butter and let it melt. Add garlic, ginger and remaining green chillies, mix and sauté for 1-2 minutes or till the raw smells disappear.

Step 3

Add red chillies, mix and sauté for 30 seconds. Add remaining onion, mix and sauté till golden brown.

Step 4

Add tomato and salt, mix and sauté till tomatoes become pulpy.

Step 5

Reduce heat, add red chilli powder, turmeric powder and garam masala powder, mix and saute for 1 minute.

Step 6

Add the egg mixture and cook, stirring continuously, for 2 minutes. Add dal, mix well, and cook for 2-3 minutes.

Step 7

Add remaining coriander leaves. Crush kasuri methi and add and mix well. Let the mixture come to a boil.

Step 8

Transfer into a serving bowl, garnish with coriander sprigs and serve hot.
