Ingredients list for Adrak ki Launji

  • 150 grams Ginger cut into thin strips and blanched
  • 3 tablespoon Mustard Oil
  • ¼ teaspoon Asafoetida
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Onion seeds (kalonji)
  • 1 cup Jaggery (gur) roughly chopped
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Garam masala powder
  • ¼ teaspoon Turmeric powder
  • to taste Salt
  • 6-8 Green chillies
  • 3 tablespoon Vinegar


  1. Heat mustard oil in a non-stick pan, add asafoetida, cumin seeds, mustard seeds, onion seeds and ginger and sauté on low heat for 4-5 minutes. Add jaggery, red chilli powder, garam masala powder, turmeric powder and salt and mix well. Cook till the jaggery melts
  2. Slit green chillies without cutting through and add and mix well. Add vinegar and mix well and cook on high heat till the mixture thickens.
  3. Transfer the launji into a sterilized container and use as required.
