Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Upma Recipe

  • Tomatoes 3-4 medium

  • Semolina 2 cup

  • Carrot 1/2 inch cubes 1 medium

  • French beans 1/2 inch pieces 5-6

  • Cauliflower florets 4-6 small

  • Oil 4 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Whole dry red chillies 4

  • Split black gram skinless (dhuli urad dal) 2 teaspoon

  • Curry leaves 10-12

  • Green chillies slit 4

  • Onion finely chopped 1 medium

  • Ginger chopped 1 inch piece

  • Green capsicum 1/2 inch cubes 1 medium

  • Green peas 1/4 cup

  • Asafoetida 1/4 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Blanch tomatoes. Drain, remove skin and puree with sufficient water to make four cups of puree. Strain.

Step 2

Roast the rawa in a dry kadai taking care that the colour does not change.

Step 3

Boil two cups of water, add a little salt and boil carrot, beans and cauliflower for five minutes.

Step 4

Drain and keep aside. Heat oil in a kadai.

Step 5

Add mustard seeds, red chillies, urad dal dhuli and curry leaves.

Step 6

When the seeds splutter, add green chillies and stir. Add onion, ginger and sauté for a few minutes.

Step 7

Add capsicum and green peas and sauté for about five minutes.

Step 8

Add the boiled vegetables, sprinkle asafoetida and salt to taste.

Step 9

Add the tomato puree and bring to a boil.

Step 10

Add the rawa in a flow, stirring continuously to prevent lumps from forming.

Step 11

Cook for a few more minutes stirring all the while.

Step 12

Garnish with chopped coriander leaves and serve hot.
