Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for Pudina Gosht Recipe

  • Mutton cut into small pieces on the bone 800 grams

  • Fresh mint leaves 1 bunch for garnish

  • Oil 4-6 tablespoons

  • Cumin seeds 1 teaspoon

  • Ginger sliced 2 piece

  • Garlic 10-12 cloves

  • Green chillies halved 5-6

  • Cashewnuts 10-15

  • Fresh coriander leaves chopped 1 cup

  • Turmeric powder 1/2 teaspoon

  • Black cardamoms 4-5

  • Green cardamoms 4-5

  • Cloves 4-5

  • Cinnamon 1 inch stick

  • Onions sliced 2

  • Salt to taste

  • Yogurt 1/2 cup

Method

Step 1

Heat 2-3 tbsps oil in a handi. Add cumin seeds and sauté. Add ginger, garlic, green chillies and sauté lightly. Add cashewnuts and sauté till they turn light brown.

Step 2

Switch off the heat, add mint leaves, coriander leaves, turmeric powder and mix well. Transfer the mixture into a mixer jar.

Step 3

Heat 2-3 tbsps oil in a handi, add black cardamoms, green cardamoms, cloves, cinnamon and sauté.

Step 4

Finely slice onions, add and sauté till lightly browned. Add mutton and mix well.

Step 5

Add salt and mix. Add 1 cup water and cook for 4-5 minutes. Grind the mint mixture with a little water to a fine paste. Add yogurt to the mutton and mix well.

Step 6

Add ground paste and cook 35-40 minutes or until the mutton is tender. Garnish with mint leaves and serve hot.
