Ingredients list for Bhindi Kadhi - SK Khazana

  • 150 grams Ladyfingers (bhindi) trimmed and cut into 1 inch pieces
  • 1 1/2 cups Yogurt
  • 2 tablespoons Gram flour (besan)
  • 1/2 teaspoon Turmeric powder
  • 3 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Fenugreek seeds
  • 2 Green chillies chopped
  • 1 inch Ginger chopped
  • Asafoetida a pinch of
  • 10-12 Curry leaves
  • Dried red chillies broken
  • 1 large Onion sliced
  • to taste Salt
  • 1/4 teaspoon Red chilli powder
  • for garnish Red chilli oil
  • to serve Steamed rice

Method

  1. Take yogurt in a large bowl, add gram flour and ¼ tsp turmeric powder and whisk well. Add 3 cups of water and whisk till you get a smooth mixture with no lumps.
  2. Heat 2 tbsps oil in a deep non-stick pan, add mustard seeds and let them splutter. Add fenugreek seeds, green chillies and ginger, asafoetida and 10-12 curry leaves, mix and sauté for a minute. Add dried red chilli and mix well.
  3. Add onion and mix well. Add salt and saute for 2 minutes or till onion turns translucent. Add the yogurt mixture and mix well. Cook on low heat for 12-15 minutes.
  4. Heat remaining oil in a non-stick pan, add lady fingers, salt, red chilli powder and remaining turmeric powder and mix well. Saute for 8-10 minutes.
  5. Transfer the kadhi into a serving bowl, top up with the sautéed lady fingers and drizzle chilli oil. Serve hot with a bowl of steamed rice.
