Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Bharela Marcha Recipe

  • Bhavnagri green chillies 12 large

  • Gram flour

  • Oil 4 tablespoons

  • Asafoetida a pinch

  • Salt to taste

  • Lemon juice 2 tablespoons

  • Gram flour (besan) 1 1/2 cups

  • Coriander powder 1 1/2 teaspoons

  • Cumin powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Garlic chopped 5 cloves

  • Turmeric powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Dry roast gram flour in a nonstick pan on low heat till it emits a nice aroma.

Step 2

Remove from heat, transfer onto a plate and allow to cool. Slit the bhavnagri chillies and remove the seeds. Cut the longer chillies into half.

Step 3

Take the roasted gram flour in a bowl, add salt, coriander powder, cumin power, red chilli powder, garlic, turmeric powder, garam masala powder and coriander leaves and mix. Put this stuffing into the slit chillies.

Step 4

Heat oil in a pan. Add asafoetida and the remaining stuffing mixture.

Step 5

Sauté for a minute. Add the stuffed chillies, salt and lemon juice. Cover and cook for some time. Sprinkle some water if required and cook till done.

Step 6

Serve hot.
