Ingredients

  • 8 tablespoons coriander seeds
  • 2 tablespoons cumin seeds
  • 2 teaspoons fennel seeds (saunf)
  • 10-12 green cardamoms
  • 4 inch cinnamon, broken
  • 4-5 black cardamoms
  • 4-5 mace blades
  • 2 teaspoons black peppercorns
  • 15-20 cloves
  • 16-20 dried Kashmiri red chillies
  • 1 teaspoon fenugreek seeds (methi dana)
  • 1 teaspoon stone flower (dagad phool)
  • 1 tablespoon dried fenugreek leaves (kasuri methi) 
  • 1 tablespoon dried ginger powder (saunth)
  • 2 teaspoons dried mango powder (amchur)
  • 1 tablespoon ratanjoth
  • 2 teaspoons turmeric powder
  • 1½ teaspoons black salt

Method

  1. Heat a non-stick pan, add coriander seeds, cumin seeds and fennel seeds, mix and dry roast for 1 minute. Transfer into a large plate and allow to cool.
  2. Add green cardamoms, cinnamon, black cardamoms, mace, black peppercorns and cloves in the same pan, mix and dry roast for 1-2 minutes. Transfer into the same plate. Allow to cool.
  3. Similarly dry roast dried red chillies in the same pan for 1-2 minutes. Transfer into the same plate. Allow to cool.
  4. Dry roast fenugreek seeds in the same pan for 30 seconds. Transfer into the same plate. 
  5. Dry roast stone flower and dried fenugreek leaves in the same pan for 30 seconds. Transfer into the same plate and allow to cool completely. 
  6. Once the roasted spices are completely cooled, transfer them into a grinder jar. Add dried ginger powder, dried mango powder, rattanjoth, turmeric powder and black salt and grind to a fine powder. This is tandoori masala powder.
  7. When the masala powder has cooled completely, store it in an air-tight container and use as required.
