Ingredients
- 750 grams mutton, cut into 2 inch pieces on the bone
- 3 medium onions
- 3-4 tablespoons oil
- 2 teaspoons cumin seeds
- 8-10 cloves
- 8-10 black peppercorns
- 4-5 green cardamoms
- 2 black cardamoms
- 1 inch cinnamon
- 1 bay leaf
- 2 Kashmiri dried red chillies
- 2 tablespoons chopped garlic
- 1½ tablespoons chopped ginger
- 2-3 green chillies, slit
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- Fresh coriander sprig for garnish
Method
- Slice onions.
- Heat oil in a thick bottom pan, add cumin seeds, cloves, black peppercorns, green cardamoms, black cardamoms, cinnamon, bay leaf and dried red chillies, mix and sauté till fragrant.
- Add onions, mix and sauté for 1 minute. Add garlic, ginger and green chillies and sauté for 1 minute.
- Add mutton and salt and sauté on high heat for 5-6 minutes.
- Add 1 cup water and mix. Cover and cook on medium heat for 35-40 minutes.
- Add coriander leaves mix well.
- Transfer into a serving bowl. Garnish with coriander sprig and serve hot.
