Ingredients
- 300 grams yam (suran), peeled, washed and grated
- 4 tablespoons ghee
- 1 teaspoon cumin seeds
- 8-10 curry leaves
- 1 teaspoon ginger-green chilli paste
- 1 teaspoon sugar
- Rock salt (sendha namak) to taste
- 2-3 tablespoons coarsely crushed roasted peanuts
- 2-3 tablespoons chopped fresh coriander leaves
- Scraped fresh coconut for garnish
- Yogurt to serve
Method
- Heat ghee in a pan, add cumin seeds and let them change colour. Add curry leaves and ginger-green chilli paste, mix well and saute for 1-2 minutes.
- Add yam, mix and sauté for 2-3 minutes. Sprinkle 2-3 tablespoons water, mix, cover and cook for 6-8 minutes.
- Add sugar, rock salt, crushed peanuts and coriander leaves and mix well.
- Switch the heat off, transfer into a serving bowl, garnish with coconut and serve with yogurt.
