Suranacha Kees

Ingredients

  • 300 grams yam (suran), peeled, washed and grated
  • 4 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 8-10 curry leaves
  • 1 teaspoon ginger-green chilli paste
  • 1 teaspoon sugar
  • Rock salt (sendha namak) to taste
  • 2-3 tablespoons coarsely crushed roasted peanuts
  • 2-3 tablespoons chopped fresh coriander leaves
  • Scraped fresh coconut for garnish
  • Yogurt to serve

Method

  1. Heat ghee in a pan, add cumin seeds and let them change colour. Add curry leaves and ginger-green chilli paste, mix well and saute for 1-2 minutes. 
  2. Add yam, mix and sauté for 2-3 minutes. Sprinkle 2-3 tablespoons water, mix, cover and cook for 6-8 minutes. 
  3. Add sugar, rock salt, crushed peanuts and coriander leaves and mix well.
  4. Switch the heat off, transfer into a serving bowl, garnish with coconut and serve with yogurt.
