Ingredients

  • 10-15 Pro V Select Whole Natural Cashew
  • 400 grams boneless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon blended sesame oil
  • 1 tablespoon chopped garlic
  • ½ tablespoon chopped ginger
  • 2-3 dried red chillies, roughly broken
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon red chilli paste
  • ½ tablespoon dark soy sauce
  • 1½ tablespoons red chilli sauce
  • ¼ cup diagonally sliced spring onion greens + to sprinkle
  • 2-3 tablespoons cornflour slurry

Method  

  1. Heat sesame oil in a non-stick wok, add garlic, ginger and dried red chillies, mix and sauté for 30 seconds.
  2. Add chicken, mix and sauté on high heat for 2-3 minutes. Reduce heat, sprinkle 2-3 tablespoons water, mix, cover and cook for 3-4 minutes.
  3. Uncover, add salt, crushed black peppercorns, red chilli paste, dark soy sauce and red chilli sauce and mix well. 
  4. Add Pro V Select Whole Natural Cashews and spring onion greens and mix well.
  5. Add cornflour slurry, mix well and cook for 2-3 minutes.
  6. Transfer into a serving plate, sprinkle spring onion greens and serve hot.
