Ingredients
- 10-15 Pro V Select Whole Natural Cashew
- 400 grams boneless chicken breasts, cut into 1-inch pieces
- 1 tablespoon blended sesame oil
- 1 tablespoon chopped garlic
- ½ tablespoon chopped ginger
- 2-3 dried red chillies, roughly broken
- Salt to taste
- Crushed black peppercorns to taste
- 1 tablespoon red chilli paste
- ½ tablespoon dark soy sauce
- 1½ tablespoons red chilli sauce
- ¼ cup diagonally sliced spring onion greens + to sprinkle
- 2-3 tablespoons cornflour slurry
Method
- Heat sesame oil in a non-stick wok, add garlic, ginger and dried red chillies, mix and sauté for 30 seconds.
- Add chicken, mix and sauté on high heat for 2-3 minutes. Reduce heat, sprinkle 2-3 tablespoons water, mix, cover and cook for 3-4 minutes.
- Uncover, add salt, crushed black peppercorns, red chilli paste, dark soy sauce and red chilli sauce and mix well.
- Add Pro V Select Whole Natural Cashews and spring onion greens and mix well.
- Add cornflour slurry, mix well and cook for 2-3 minutes.
- Transfer into a serving plate, sprinkle spring onion greens and serve hot.
