Bbq Tofu With Rice Noodles

When craving for some delicious vegetarian noodles, then this beautiful BBQ Tofu with Rice Noodles is what you should go for. Rice noodles are sauteed with a medley of colourful veggies some flavourings, then topped with BBQ tofu!

Ingredients 

  • 2 tablespoons barbeque sauce
  • 200 grams firm tofu
  • 3 cups cooked rice noodles
  • 3-4 tablespoons chopped garlic                 
  • 1 tablespoon red chilli sauce
  • Salt to taste
  • Crushed black peppercorns to taste
  • 4 tablespoons oil                                
  • 2-3 spring onion bulbs, diagonally sliced into 1 inch pieces
  • 1 small carrot, peeled and cut into thin strips
  • 1 small green capsicum, cut into thin strips
  • 1 small red capsicum, cut into thin strips
  • 1 teaspoon soy sauce
  • Toasted white sesame seeds for garnish
  • Chopped spring onion greens for garnish

Method 

  1. Cut tofu into 1-inch square slices. 
  2. To make the marinade, take 1½ tablespoons garlic in a large bowl, add barbeque sauce, red chilli sauce, salt and crushed black peppercorns and mix well. 
  3. Add the tofu squares and apply the marinade well on each square. 
  4. Skewer a few tofu squares on each satay stick. 
  5. Heat 2 tablespoons oil in a shallow pan, add remaining garlic, spring onion bulbs, carrot, green capsicum and red capsicum, mix and sauté on high heat for 30 seconds.
  6. Add salt, crushed black peppercorns and soy sauce and mix well. Add the cooked rice noodles and toss till well combined.
  7. Heat remaining oil in a non-stick grill pan, arrange the tofu satay sticks and grill on high heat for 1-2 minutes. Flip, drizzle the remaining marinade and cook the other side for 1-2 minutes well. Add 2-3 tablespoons water and cook for a few seconds.
  8. Transfer the noodles into a serving bowl, keep the satay sticks with tofu over and serve garnished with toasted white seeds and spring onion greens.
