Ingredients list for Thai Style Chicken Breasts in Foil
- 2 Boneless chicken breasts , sliced diagonally
- 2 inches Lemon grass root
- 10-12 Shallots , peeled
- 2 teaspoons Fish sauce
- 1/2 teaspoon Red chillies , crushed
- 1 medium Raw mango , peeled
- 4-5 Kaffir lime leaves
- 1/2 Lemon
- 2 Lotus stems , cleaned thoroughly, peeled, sliced and boiled in
- 1/2 cup Coconut milk
- 8 Aluminium foil , cut into 6 inch squares
Method
- Slice lemon grass root and put into a mortar and crush with a pestle. Put it into a bowl.
- Take shallots in a bowl, add chicken pieces, fish sauce and crushed red chillies. Slice the raw mango and add to the bowl. Tear kaffir lime leaves and add. Squeeze the juice of lemon into the bowl. Add lotus stems and coconut milk and mix well.
- Place 2 foil pieces one on top of the other for each packet, put chicken mixture in the centre, bring the corners together to make a potli and press to seal.
- Heat a non-stick pan, place the potlis in it, put some water in it so that the potlis are half submerged. Cover and cook for 15 minutes on medium heat.
- Remove from the pan and serve hot in the foil itself.
