Ingredients
- 4-5 medium potatoes, boiled, and peeled
- 2 tablespoons gram flour
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- ¼ teaspoon asafoetida (hing)
- 2 green chillies, chopped
- 10-15 curry leaves
- 1 large onion, chopped
- 1 medium carrot, peeled and roughly chopped
- ¼ cup shelled green peas
- Salt to taste
- ½ teaspoon turmeric powder
- 2 tablespoons chopped fresh coriander leaves + for garnish
- Puris to serve
Method
- Take gram flour in a bowl, add ½ cup water and mix to make a smooth mixture.
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add asafoetida, green chillies and curry leaves and mix well.
- Add onion, mix and saute till translucent. Add carrot, green peas and salt and mix well. Cover and cook for 3-4 minutes.
- Add turmeric powder, mix and cook for 1 minute.
- Add the gram flour mixture and mix and cook for 1 minute. Add 1½ cups water and mix well.
- Mash the potatoes and add and mix till well combined. Cover and cook on medium heat for 4-5 minutes.
- Add coriander leaves and mix well. Transfer into a serving bowl, garnish with coriander leaves and serve hot with puris.
