Potato Sagu

Potato curry cooked in South Indian style. Cooked with some vegetables in gram flour slurry and some spices, this curry goes well with puris.

Ingredients

  • 4-5 medium potatoes, boiled, and peeled
  • 2 tablespoons gram flour
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • ¼ teaspoon asafoetida (hing)
  • 2 green chillies, chopped
  • 10-15 curry leaves
  • 1 large onion, chopped
  • 1 medium carrot, peeled and roughly chopped
  • ¼ cup shelled green peas
  • Salt to taste     
  • ½ teaspoon turmeric powder
  • 2 tablespoons chopped fresh coriander leaves + for garnish
  • Puris to serve

Method

  1. Take gram flour in a bowl, add ½ cup water and mix to make a smooth mixture.
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add asafoetida, green chillies and curry leaves and mix well.
  3. Add onion, mix and saute till translucent. Add carrot, green peas and salt and mix well. Cover and cook for 3-4 minutes.
  4. Add turmeric powder, mix and cook for 1 minute. 
  5. Add the gram flour mixture and mix and cook for 1 minute. Add 1½ cups water and mix well.  
  6. Mash the potatoes and add and mix till well combined. Cover and cook on medium heat for 4-5 minutes. 
  7. Add coriander leaves and mix well. Transfer into a serving bowl, garnish with coriander leaves and serve hot with puris.
