Ingredients
- 400 grams cottage cheese (paneer), cut into 1 inch cubes
- Masala paste
- 2 tablespoons oil
- 1 inch cinnamon
- 8-10 black peppercorns
- 1 black cardamom
- 4 green cardamoms
- 1 star anise, broken
- 3-4 cloves
- 2 tablespoons coriander seeds
- 2-3 Kashmiri dried red chillies
- 3-4 bedgi dried red chillies
- 1 teaspoon cumin seeds
- ¾ cup grated dried coconut
- 1 teaspoon poppy seeds (khuskhus)
- Gravy
- 1 tablespoon oil
- 2 bay leaves
- 2 medium onions, finely chopped
- Salt to taste
- 1½ tablespoons ginger-garlic paste
- 1 cup tomato puree
- 1 green chilli, chopped
- 1 teaspoon red chilli paste
- ½ teaspoon turmeric powder
- 1½ teaspoons coriander powder
- ½ teaspoon sankeshwari red chilli powder
- ½ teaspoon garam masala powder
- 1 medium green capsicum, cut into 1 inch cubes
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh coriander leaves + for garnish
Method
- Heat oil in a pan, add cinnamon, black peppercorns, black cardamom, green cardamoms, star anise, cloves, coriander seeds, Kashmiri dried red chillies, Bedgi dried red chillies, cumin seeds and dried coconut, mix well and saute till golden. Add poppy seeds and continue to saute for 1 minute. Take the pan off the heat and allow to cool.
- Transfer the sauteed mixture into a grinder jar, add 1 cup water and grind to a fine paste.
- Heat oil in the same pan, add bay leaves, onions and salt, mix and saute till golden brown.
- Add ginger-garlic paste, mix and sauté for 1-2 minutes. Add tomato puree, mix well and saute till oil separates.
- Add green chilli and red chilli paste, mix well and saute on medium heat for 2-3 minutes, stirring occasionally.
- Add the ground paste, mix well and saute till oil separates.
- Add turmeric powder, coriander powder, sankeshwari red chilli powder and garam masala powder, mix and sauté for 1-2 minutes.
- Add 1½ cups water, mix and cook for 2-3 minutes. Add capsicum and mix well and cook for 1-2 minutes.
- Add lemon juice, mix and cook for a few seconds. Add coriander leaves, mix and cook for 1 minute. Add cottage cheese cubes, mix and cook for 1 minute.
- Transfer into a serving bowl and serve hot garnished with coriander leaves.
