Ingredients
- 4 readymade whole wheat tortillas/wraps
- 2 tablespoons oil
- 1½ cups leftover potato sabzi
- 100 grams cottage cheese (paneer)
- 3 tablespoons sriracha sauce
- ½ medium red capsicum
- 1 medium onion
- Mayonnaise to drizzle
Method
- Heat oil in a non-stick pan and add potato sabzi. Crumble cottage cheese and add to the pan. Drizzle sriracha sauce and mix well.
- Slice red capsicum and onion.
- Heat a non-stick tawa. Add each readymade whole wheat tortilla, one at a time, and cook for 1 minute on each side.
- Drizzle some mayonnaise on each tortilla and spread evenly. Place sabzi mixture in the centre and top up with red capsicum and onion slices.
- Roll the tortilla tightly, first roll it in parchment paper and then roll in aluminium foil and serve.
