Ingredients
- 250 grams apple gourd (tinde)
- 8 toasted baguette slices
- 2 tablespoons olive oil
- 1 tablespoon chopped garlic
- 1 medium onion, chopped
- ½ cup tomato concasse
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons chopped fresh parsley
- 6-8 fresh basil leaves
- Fresh basil sprigs to garnish
Method
- Preheat oven to 180° C.
- Peel and chop apple gourds.
- Heat olive oil in a non-stick pan, add garlic and sauté for 30 seconds. Add onion, mix and sauté till translucent.
- Add apple gourds, mix and sauté for 30 seconds.
- Add tomato concasse and mix. Add salt and crushed black peppercorns, mix well, cover and cook on medium heat for 5-6 minutes.
- Add ½ cup water, mix well, cover and cook for 4-5 minutes more.
- Add parsley, tear basil leaves and add to the pan and mix well. Take the pan off the heat and allow to cool slightly.
- Arrange the toasted baguette slices on a serving platter and spread this mixture over them. Garnish with basil sprigs and serve.
