Ingredients

  • 250 grams apple gourd (tinde)
  • 8 toasted baguette slices
  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • 1 medium onion, chopped
  • ½ cup tomato concasse
  • Salt to taste
  • Crushed black peppercorns to taste
  • 2 tablespoons chopped fresh parsley
  • 6-8 fresh basil leaves
  • Fresh basil sprigs to garnish

Method

  1. Preheat oven to 180° C.
  2. Peel and chop apple gourds.
  3. Heat olive oil in a non-stick pan, add garlic and sauté for 30 seconds. Add onion, mix and sauté till translucent.
  4. Add apple gourds, mix and sauté for 30 seconds.
  5. Add tomato concasse and mix. Add salt and crushed black peppercorns, mix well, cover and cook on medium heat for 5-6 minutes.
  6. Add ½ cup water, mix well, cover and cook for 4-5 minutes more.
  7. Add parsley, tear basil leaves and add to the pan and mix well. Take the pan off the heat and allow to cool slightly.
  8. Arrange the toasted baguette slices on a serving platter and spread this mixture over them. Garnish with basil sprigs and serve.
