Aloo Palak Ki Sabzi

Ingredients

  • 3 medium potatoes (aloo), peeled and cut into ½ inch pieces
  • 2 cups shredded spinach (palak)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, chopped
  • 1 tablespoon chopped ginger
  • 1 tablespoon chopped garlic
  • 1 medium tomato, chopped
  • 2-3 green chillies, chopped
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon coriander powder
  • Salt to taste

Method

  1. Heat oil in a pan, add potatoes and sauté for 5-6 minutes on medium heat. Drain on a plate and set aside.
  2. Add cumin seeds to the same pan and once they start to change colour, add onion, mix and sauté till light golden.
  3. Add ginger and garlic, mix and sauté for 1 minute.
  4. Add tomato and green chillies, mix and cook till tomato turns soft and pulpy.
  5. Add red chilli powder, turmeric powder, garam masala powder and coriander powder and mix well.
  6. Add spinach, potatoes and salt, mix well and cook for 2-3 minutes.
  7. Transfer into a serving bowl and serve hot.
