Ingredients
- 3 medium potatoes (aloo), peeled and cut into ½ inch pieces
- 2 cups shredded spinach (palak)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 medium onion, chopped
- 1 tablespoon chopped ginger
- 1 tablespoon chopped garlic
- 1 medium tomato, chopped
- 2-3 green chillies, chopped
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1 teaspoon coriander powder
- Salt to taste
Method
- Heat oil in a pan, add potatoes and sauté for 5-6 minutes on medium heat. Drain on a plate and set aside.
- Add cumin seeds to the same pan and once they start to change colour, add onion, mix and sauté till light golden.
- Add ginger and garlic, mix and sauté for 1 minute.
- Add tomato and green chillies, mix and cook till tomato turns soft and pulpy.
- Add red chilli powder, turmeric powder, garam masala powder and coriander powder and mix well.
- Add spinach, potatoes and salt, mix well and cook for 2-3 minutes.
- Transfer into a serving bowl and serve hot.
