Ingredients
- 250 grams dried white peas, soaked for 6-8 hours
- Salt to taste
- A pinch of turmeric powder
- A pinch of soda-bi-carbonate
- 1 medium onion, finely chopped
- 2 green chillies, chopped + to sprinkle
- 2-3 tablespoons chopped fresh coriander leaves + to sprinkle
- 2-3 tablespoons date and tamarind chutney
- 2-3 tablespoons green chutney
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- Black salt to taste
- A pinch of yellow chilli powder
- 1 tablespoon lemon juice
- Fried masala chillies for garnish
- Butter as required
- 4 kulchas for serving
Method
- Drain the white peas and put into a pressure cooker. Add 2 cups water, salt, turmeric powder and soda-bi-carbonate and mix well. Cover and cook under pressure on medium heat till 4 whistles are released.
- Open the lid once the pressure settles completely and transfer the peas into a bowl.
- Add onion, green chillies, coriander leaves, date and tamarind chutney, green chutney, roasted cumin powder, chaat masala, black salt, salt, yellow chilli powder and lemon juice and mix well.
- Heat butter on a non-stick tawa. Place kulchas on it and toast till crisp.
- Transfer matra chaat into serving bowls, sprinkle some green chillies and coriander leaves on top. Garnish with fried masala chillies and serve with toasted kulchas.
