Ingredients
- 6 eggs
- Salt to taste
- ½ teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 4 tablespoons chopped onion
- 4 tablespoons chopped tomato
- 2 green chillies, chopped
- 4 tablespoons chopped fresh coriander leaves + for garnish
- 2 teaspoons butter
- 2 teaspoons oil
- Processed cheese as required
- 4 buttered pavs to serve
- Stuffing
- 200 grams boneless chicken, cut into thin strips
- 3-4 tablespoons oil
- 1 teaspoon cumin seeds
- 2 small onions, chopped
- 2 green chillies, chopped
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- Salt to taste
- 2 small tomatoes, chopped
- 2 tablespoons chopped fresh coriander leaves
Method
- Break the eggs into a large bowl and whisk it well with a fork.
- Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies and coriander leaves and whisk well.
- To make the stuffing, heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onions and green chillies, mix and saute till golden brown.
- Add turmeric powder, red chilli powder, coriander powder, cumin powder and salt, mix well and saute for 1 minute.
- Add chicken, mix and sauté on high heat for 3-4 minutes.
- Add tomatoes and coriander leaves and mix. Reduce heat to medium, cover the pan and continue to cook for 4-5 minutes or till the chicken is done.
- To make each portion, heat 1 teaspoon butter with 1 teaspoon oil in a small non-stick pan.
- Add half the eggs mixture, cover and cook for 2-3 minutes. Spread half the chicken mixture on top of the eggs, grate some processed cheese over it, cover and cook till cheese melts.
- Transfer the omelette onto a serving plate, garnish with coriander leaves. Serve hot with buttered pavs.
