Masala Chicken Omelette

This is insanely delicious. Shredded chicken sautéed with some simple masalas becomes the top layer of a simple egg omelette and your breakfast is nothing but amazing.

Ingredients

  • 6 eggs
  • Salt to taste
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 4 tablespoons chopped onion
  • 4 tablespoons chopped tomato
  • 2 green chillies, chopped
  • 4 tablespoons chopped fresh coriander leaves + for garnish
  • 2 teaspoons butter
  • 2 teaspoons oil
  • Processed cheese as required
  • 4 buttered pavs to serve
  • Stuffing
  • 200 grams boneless chicken, cut into thin strips
  • 3-4 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 small onions, chopped
  • 2 green chillies, chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • 2 small tomatoes, chopped
  • 2 tablespoons chopped fresh coriander leaves

Method

  1. Break the eggs into a large bowl and whisk it well with a fork.
  2. Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies and coriander leaves and whisk well.
  3. To make the stuffing, heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onions and green chillies, mix and saute till golden brown. 
  4. Add turmeric powder, red chilli powder, coriander powder, cumin powder and salt, mix well and saute for 1 minute.
  5. Add chicken, mix and sauté on high heat for 3-4 minutes.
  6. Add tomatoes and coriander leaves and mix. Reduce heat to medium, cover the pan and continue to cook for 4-5 minutes or till the chicken is done.
  7. To make each portion, heat 1 teaspoon butter with 1 teaspoon oil in a small non-stick pan.
  8. Add half the eggs mixture, cover and cook for 2-3 minutes. Spread half the chicken mixture on top of the eggs, grate some processed cheese over it, cover and cook till cheese melts.
  9. Transfer the omelette onto a serving plate, garnish with coriander leaves. Serve hot with buttered pavs.
