Ingredients
- 1 large bottle gourd (lauki)
- ½ cup split skinless green gram (dhuli moong dal)
- 2 tablespoons mustard oil
- 1 teaspoon cumin seeds
- 1½ tablespoons chopped ginger
- 2 green chillies, slit
- 2 dried red chillies, broken
- ½ teaspoon turmeric powder
- 1 teaspoon cumin powder
- Salt to taste
- ½ teaspoon sugar
- 2-3 tablespoons chopped fresh coriander leaves
Method
- Peel bottle gourd and slice thinly. Further cut the slices into thins strips and soak them in a bowl of water.
- Heat a shallow non-stick pan, add split green gram and sauté till golden brown.
- Transfer into water and wash well. Drain the water.
- Heat mustard oil in a non-stick kadai till it begins to smoke, add cumin seeds and once they start to change colour, add ginger, mix and sauté for 30 seconds.
- Add green chillies and dried red chillies and mix well. Add drained split green gram, mix and sauté for 2-3 minutes.
- Add turmeric powder, cumin powder and salt and mix well. Add bottle gourd and mix well. Cover and cook on medium heat for 10-12 minutes.
- Add sugar and coriander leaves and mix well.
- Transfer into a serving bowl and serve hot.
