Ingredients
- 225 grams ladies’ fingers (bhindi)
- ½ teaspoon turmeric powder
- 2 teaspoons Kashmiri red chilli powder
- ¼ teaspoon garam masala powder
- 1 teaspoon cumin powder
- 2 teaspoons dried mango powder (amchur)
- 1 teaspoon salt
- 4 tablespoons gram flour
- 2 tablespoons rice flour
- 1 teaspoon carom seeds (ajwain)
- Juice of 1 lemon
- 1 tablespoon oil + for spraying
Method
- Rinse and pat dry ladies fingers thoroughly. Trim ends and slice lengthwise into 4-6 pieces depending on thickness.
- Preheat the air fryer to 175° C for 2-3 minutes.
- Transfer the ladies fingers into a bowl, add turmeric powder, Kashmiri red chili powder, garam masala powder, cumin powder, dried mango powder, salt, gram flour, rice flour, carom seeds, lemon juice and 2-3 tablespoons water and mix gently till all the pieces are coated evenly. Add oil and mix gently again.
- Spray some oil in the air fryer basket and spread ladies finger pieces in it in a single layer. Fit the basket to the air fryer and air fry for 10 minutes.
- Bring the basket out, shake, spray some more oil, fit the basket into the air fryer again and air fry for another 7 minutes or till crisp. Air fry the remaining pieces similarly.
- Bring the basket out, transfer into a serving bowl and serve immediately.
