Ingredients
- 20-24 button mushrooms, sliced
- 2 medium yellow capsicums, seeded and sliced
- 2 medium onions, sliced
- 4 readymade tortillas
- Hummus to spread
- Guacamole as required
- Fajita Sauce
- 1 teaspoon red chilli powder
- 1 teaspoon smoked paprika powder
- 1½ teaspoons cumin powder
- Salt to taste
- 1 teaspoon dark soy sauce
- 4 tablespoons sweet chilli sauce
Method
- To make fajita sauce, take red chilli powder in a bowl, add smoked paprika powder, cumin powder, salt, dark soy sauce and sweet chilli sauce and mix well.
- Add mushrooms, yellow capsicums and onions and mix well.
- Preheat the air fryer at 200° C for 2-3 minutes.
- Line air fryer tray with aluminium foil, place the vegetables on it, fit the tray into the air fryer and air fry for 15 minutes. Bring the tray out and allow to cool.
- Place tortillas on worktop and spread hummus evenly over each of them, place a generous portion of mushroom mixture on one side, top with a generous portion of guacamole and roll tightly.
- Halve each of the wrap, arrange on a serving plate and serve.
