Ingredients

  • Ready-made chicken tikka pieces as required
  • 2 tablespoons butter
  • Ready-made pizza dough made using 1½ cups refined flour (maida) 
  • 1 tablespoon oil
  • 5-6 garlic cloves, roughly sliced
  • 1 inch ginger, roughly chopped
  • 3-4 medium tomatoes, sliced
  • 1 green chilli, broken
  • 5-6 cashewnuts
  • 1 teaspoon red chilli powder
  • Salt to taste
  • ¼ teaspoon green cardamom powder
  • ½ teaspoon garam masala powder
  • ¼ teaspoon dried fenugreek leaves (kasuri methi) powder + for sprinkling
  • 1 tablespoon fresh cream
  • 1 teaspoon honey 
  • Refined flour for dusting
  • 1 small green capsicum, cut into small cubes
  • 1 small onion, diced and layers separated
  • 8-10 small bocconcini pieces

Method

  1. Preheat oven with the baking tray to 250º C.
  2. To make the sauce, heat 1 tablespoon oil and 1 tablespoon butter in a pan, add garlic, ginger and tomatoes, mix well and saute for 2-3 minutes. Add green chilli and mix.
  3. Add cashewnuts, red chilli powder and salt, mix well and saute for 1-2 minutes. 
  4. Add 1 cup water, mix, cover and cook for 4-5 minutes or till the tomatoes are pulpy. 
  5. Take the pan off the heat and allow to cool. Transfer the mixture into a grinder jar and grind to a fine paste. Transfer the paste into the same pan and place it back on heat. 
  6. Add green cardamom powder, garam masala powder and dried fenugreek leaves powder, mix well and saute for 1-2 minutes. 
  7. Add the remaining butter and mix well. Add fresh cream and mix till well combined. 
  8. Switch the heat off and add honey and mix well. Allow to cool completely. 
  9. Dust the worktop with some refined flour. Knockback the dough, take a portion of the dough, place the dough on the worktop and roll it into a disc.
  10. Dust a wooden peel (a wooden tray) with some refined flour and keep the rolled out disc on it. Apply some sauce over the disc. Arrange some chicken tikka pieces over it, place some capsicum pieces, onion dices, break some bocconcini pieces and arrange them over the pizza. Carefully slide the pizza on the hot baking tray in the preheated oven and bake for 10-15 minutes. 
  11. Bring the pizza out of the oven, place it on a serving tray, sprinkle some dried fenugreek leaves powder, cut into wedges and serve.
