Ingredients
- 750 grams mutton, cut into 2 inch pieces on bone
- 3 large onions, thinly sliced
- 2-3 green chillies, slit
- 1½ Kashmiri red chilli powder
- ½ teaspoon turmeric powder
- 1 tablespoon coriander powder
- 2 teaspoons cumin powder
- Salt to taste
- 2 whole garlic pods
- 1 tablespoon ginger-garlic paste
- 3-4 tablespoons mustard oil
- 3-4 green cardamoms
- 8-10 black peppercorns
- 1 inch cinnamon
- 4-5 cloves
- 1 black cardamom
- 2 medium tomatoes, vertically quartered
- 3-4 tablespoons chopped fresh coriander leaves
- Fresh coriander sprig for garnish
- Steamed rice to serve
Method
- Take mutton in a large parat, add onions, green chillies, Kashmiri red chilli powder, turmeric powder, coriander powder, cumin powder, salt, garlic pods and ginger-garlic paste and mix crushing lightly with your fingers till each mutton piece is well coated with the masala. Set aside to marinate for 10-15 minutes.
- Heat mustard oil in a pressure cooker and till it begins to smoke.
- Add green cardamoms, black peppercorns, cinnamon, cloves and black cardamom and saute till fragrant.
- Add mutton, mix and sauté on high heat for 3-4 minutes, stirring every few minutes.
- Add tomatoes and 1½ cups water and mix well. Reduce heat to medium, cover and cook for 4-5 whistles.
- Open the cooker once the pressure has reduced completely.
- Place the cooker back on heat and cook till the mixture comes to a boil. Add coriander leaves and mix well.
- Transfer the curry into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
