Ingredients
- 2 medium potatoes (aloo), peeled and cut into batons
- 200 grams French beans, stringed and cut into 2 inch pieces
- 2-3 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- ½ teaspoon cumin powder
- 1½ teaspoons coriander powder
- 1 teaspoon garam masala powder
- 1 teaspoon dried mango powder (amchur)
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- Chapattis for serving
Method
- Heat oil in a non-stick pan, add mustard seeds and once they begin to splutter, add cumin seeds and mix well.
- Add potatoes, mix well, cover and cook on medium heat for 4-5 minutes.
- Add French beans and mix well. Add red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder and dried mango powder and mix well.
- Sprinkle 2-3 tablespoons water, add salt and mix well. Cover and cook on low heat for 6-8 minutes.
- Add coriander leaves and mix well.
- Transfer into a serving bowl and serve hot with chapattis.
