Quick Peanut Potatoes

Ingredients

  • 4 medium potatoes, boiled, peeled and cut into cubes
  • ½ cup raw peanuts
  • 2 tbsps ghee
  • 1 tsp white sesame seeds
  • 8-10 curry leaves
  • 1 tsp ginger-green chilli paste
  • Salt to taste
  • A pinch of sugar
  • 2 tbsps freshly chopped coriander leaves
  • Sprig of coriander for garnish


Method

  1. Heat ghee in a non-stick pan, add white sesame seeds, curry leaves and cook till the seeds have changed colour.
  2. Add peanuts and sauté on medium heat for 3-4 minutes. Add ginger-green chilli paste, mix well. 
  3. Add potatoes, salt and a pinch of sugar, chopped coriander and mix well. Cook for 3-4 minutes.
  4. Transfer to a serving bowl, garnish with coriander sprig and serve hot.
