Ingredients
- 4 medium potatoes, boiled, peeled and cut into cubes
- ½ cup raw peanuts
- 2 tbsps ghee
- 1 tsp white sesame seeds
- 8-10 curry leaves
- 1 tsp ginger-green chilli paste
- Salt to taste
- A pinch of sugar
- 2 tbsps freshly chopped coriander leaves
- Sprig of coriander for garnish
Method
- Heat ghee in a non-stick pan, add white sesame seeds, curry leaves and cook till the seeds have changed colour.
- Add peanuts and sauté on medium heat for 3-4 minutes. Add ginger-green chilli paste, mix well.
- Add potatoes, salt and a pinch of sugar, chopped coriander and mix well. Cook for 3-4 minutes.
- Transfer to a serving bowl, garnish with coriander sprig and serve hot.
