Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Quick Peanut Potatoes Recipe

  • Medium potatoes boiled, peeled and cut into cubes 2

  • Raw peanuts 1/2 cup

  • Ghee 3 tablespoons

  • White sesame seeds 1 teaspoon

  • Curry leaves 8-10

  • Ginger-green chilli paste 1 teaspoon

  • Salt to taste

  • Sugar a pinch

  • Fresh coriander leaves chopped 2 tablespoons

  • Fresh coriander sprig for garnish

Method

Step 1

Heat ghee in a non-stick pan, add white sesame seeds and curry leaves and saute till the seeds have changed colour.

Step 2

Add peanuts and sauté on medium heat for 3-4 minutes or till the peanuts are well sauteed. Add ginger-green chilli paste, mix well.

Step 3

Add potatoes, salt, sugar and coriander leaves, mix well and saute for 3-4 minutes.

Step 4

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
