Ingredients
- ½ cup Pro V Select Whole Natural Almonds
- ½ cup refined flour (maida)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon cinnamon powder
- ½ cup castor sugar
- ¾ cup milk
- 1 egg, lightly whisked
- 1 teaspoon vanilla essence
- 1 tablespoon melted butter + for cooking
- Maple syrup as required
- Mixed berries for serving
- Fresh mint sprigs for garnish
Method
- Take Pro V Select Whole Natural Almonds in a bowl, add sufficient water and soak for 6-8 hours.
- Preheat oven to 180⁰ C.
- Spread the almonds evenly on baking tray and roast for 35-40 minutes. Allow to cool.
- Transfer into a grinder jar and grind to fine powder. This is almond flour. Transfer almond flour into a bowl.
- Sift together refined flour, baking powder, salt and cinnamon and into the bowl with almond flour, add castor sugar and mix well
- Make a well and add milk, egg and vanilla essence and whisk well. Add melted butter and 1 teaspoon hot water and whisk to make a smooth batter.
- Heat butter in a non-stick pan, pour ladle full of batter in it and spread into a roundel. These are pikelets. Drizzle some butter all around the pancake and cook for 2-3 minutes on medium heat. Turn and cook for 2-3 minutes more on other side as well. Use the remaining batter similarly.
- Stack the pancakes one on top of the other in a serving plate, drizzle maple syrup, garnish with mixed berries and mint sprigs and serve.
