Ingredients
- Boba
- 1 cup + 1 teaspoon tapioca flour
- 4 tablespoons brown sugar
- 1 teaspoon cocoa powder
- Boba Tea
- 2 tea bags
- ¼ cup boba
- Ice cubes as required
- Chilled milk as required
- Blue Pea Boba
- 1 cup blue pea water
- ¼ cup castor sugar
- ¼ cup boba
- Ice cubes as required
- Lemon slices as required
- Drinking soda as required
Method
- For boba, heat 3½ tablespoons water in a deep pan, add 2 tablespoons brown sugar and cook until the sugar dissolves. Add 1 teaspoon tapioca flour, mix well and cook for 2-3 minutes. Take the pan off the heat.
- Add cocoa powder and ½ cup tapioca flour and knead into a soft dough. Divide the mixture into small equal portions and roll into balls. Dust them in ½ cup tapioca flour.
- Boil sufficient water in a deep non-stick pan, add the tapioca pearls and cook on medium heat for 20 minutes. Switch off the heat and set aside for 30 minutes in the same liquid.
- Heat a pan. Strain the pearls into it, add ¼ cup water and 2 tablespoons brown sugar and cook on medium heat for 5 minutes. Transfer into a bowl and allow to cool.
- Dip tea bags in 1 cup hot water and set aside for 5-10 minutes.
- Heat blue pea water in a shallow pan, add castor sugar and cook until it coats the back of the spoon. Allow to cool.
- Transfer ¼ cup boba into a serving glass, add the tea decoction, ice cubes and fill up the glass with chilled milk. Serve.
- Transfer ¼ cup boba into another serving glass, add the blue pea syrup, ice cubes, lemon slices and fill up the glass with drinking soda and serve.
