Ingredients
- 4 raw mangoes, peeled cut into wedges
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 10 curry leaves
- 2-3 green cardamoms
- 1 inch cinnamon stick
- 1 medium onion, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon curry powder
- 1 teaspoon ginger-garlic paste
- 1/2 cup scraped fresh coconut
- 1 tablespoon roasted coriander seeds
- 2-3 dried red chillies
- 1 teaspoon brown sugar/jaggery
- Salt to taste
Method
- Heat oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter. Add curry leaves, green cardamoms and cinnamon and mix.Add onion and sauté till golden.
- Add turmeric powder, red chilli powder and curry powder and mix well. Add ginger-garlic paste and sauté till the raw aroma is gone.
- Add mango and mix. Add about half a cup of water, reduce heat and cook on medium heat for three to four minutes.
- Put coconut, coriander seeds and red chillies in a mixer jar and grind to a smooth paste with a little water.
- Add ground paste to the curry and mix well.Add brown sugar and salt and mix well.Continue cooking for a minute.
- Transfer into a serving bowl and serve hot with steamed rice.
