Ingredients
- 1 cup kidney beans (rajma), boiled
- ½ medium bunch of fresh coriander
- ½ medium bunch fresh mint (pudina)
- 1-2 green chillies
- 1 medium onion, sliced
- 1 tablespoon chopped garlic
- 1 inch chopped ginger
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- A pinch of asafoetida
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- Salt to taste
- 1 teaspoon garam masala powder
Method
- Grind together fresh coriander, fresh mint and green chillies with some water. Add onion, garlic, ginger and grind to a fine paste.
- Heat oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add asafoetida and prepared paste, mix and cook for 2-3 minutes.
- Add cumin powder, coriander powder, turmeric powder and chilli powder and mix well. Add ½ cup water, mix and bring to boil.
- Add salt and kidney beans, mix, cover and cook for 5-7 minutes.Add garam masala powder, mix, cover and cook for a minute.
- Serve hot garnished with ginger juliennes.
