Ingredients list for Pudina Chicken Pulao
- 1 1/2 cups Basmati rice , soaked for 30 minutes and drained
- 600 grams Chicken , cut into 1 1/2 inch pieces on the bone
- 1 cup Mint (pudina) chutney
- 2-3 tablespoons Ghee
- 1 inch Cinnamon
- 5-6 Black peppercorns
- 1 Bay leaf
- 2-3 Green chillies , slit
- 1 tablespoons Garlic , chopped
- 2 medium Onions , sliced
- 1 inch Ginger , cut into thin strips
- 1 cup Yogurt
- 1 1/2 teaspoons Coriander powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Garam masala powder
- to taste Salt
- 1/4 cup Fresh coriander leaves , chopped
- 1/4 cup Fresh mint leaves , chopped
- to garnish Fresh mint sprig
- to serve Raita
- to serve Papad , roasted
Method
- Heat ghee in a deep non-stick pan, add cinnamon, black peppercorns, bay leaf, green chillies and garlic, mix and sauté till fragrant.
- Add onions and ginger, mix well, cover and cook till golden brown.
- Add chicken pieces and mix well. Add green chutney and yogurt, mix well, cover and cook for 5-10 minutes.
- Add coriander powder, turmeric powder, garam masala powder and salt, mix and cook for 1 minute.
- Add coriander leaves, mint leaves and rice and mix well. Adjust salt and 3 cups water, mix, cover and cook till rice is fully done.
- Transfer into a serving bowl, garnish with a mint sprig and serve hot with raita and roasted papad.
