Ingredients list for Pudina Chicken Pulao

  • 1 1/2 cups Basmati rice , soaked for 30 minutes and drained
  • 600 grams Chicken , cut into 1 1/2 inch pieces on the bone
  • 1 cup Mint (pudina) chutney
  • 2-3 tablespoons Ghee
  • 1 inch Cinnamon
  • 5-6 Black peppercorns
  • 1 Bay leaf
  • 2-3 Green chillies , slit
  • 1 tablespoons Garlic , chopped
  • 2 medium Onions , sliced
  • 1 inch Ginger , cut into thin strips
  • 1 cup Yogurt
  • 1 1/2 teaspoons Coriander powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • to taste Salt
  • 1/4 cup Fresh coriander leaves , chopped
  • 1/4 cup Fresh mint leaves , chopped
  • to garnish Fresh mint sprig
  • to serve Raita
  • to serve Papad , roasted

Method

  1. Heat ghee in a deep non-stick pan, add cinnamon, black peppercorns, bay leaf, green chillies and garlic, mix and sauté till fragrant.
  2. Add onions and ginger, mix well, cover and cook till golden brown.
  3. Add chicken pieces and mix well. Add green chutney and yogurt, mix well, cover and cook for 5-10 minutes.
  4. Add coriander powder, turmeric powder, garam masala powder and salt, mix and cook for 1 minute.
  5. Add coriander leaves, mint leaves and rice and mix well. Adjust salt and 3 cups water, mix, cover and cook till rice is fully done.
  6. Transfer into a serving bowl, garnish with a mint sprig and serve hot with raita and roasted papad.
