Ingredients
- ¾ cup potatoes boiled, peeled and grated
- 8 pavs
- 2 tablespoons pav bhaji masala + to sprinkle
- 2 tablespoons oil
- 3 medium onions, finely chopped
- 1 tablespoon ginger-garlic paste
- 3 medium tomatoes, finely chopped
- 1 tablespoon tomato paste
- ¼ cup carrots boiled and mashed
- Salt to taste
- 1 medium green capsicum, finely chopped
- 1 tablespoon butter + as required
- 1 tablespoon fresh coriander leaves, finely chopped
- A few lemon wedges
Method
- Heat oil in a deep non-stick pan. Add half the onions and sauté till lightly browned.
- Add ginger-garlic paste and sauté for a minute. Add tomatoes and mix well. Add tomato paste and mashed carrots, mix well and cook till tomatoes turn soft and pulpy.
- Add salt and 1 tablespoon pav bhaji masala, mix well and cook for 2 minutes. Add potatoes and mix well. Add a little water, mix well, cover and cook for 2 minutes.
- Add capsicum and mix well. Add some more water and remaining pav bhaji masala, mix well and simmer for a minute.
- Add butter and coriander leaves, mix well, cover and simmer for 5 minutes.
- Slit the pavs horizontally, apply some butter and sprinkle some pav bhaji masala on them.
- Serve with hot bhaji, remaining chopped onions and lemon wedges
