Ingredients list for Palak ki Kadhi
- ½ medium bunch Spinach shredded
- 2 cups Yogurt whisked
- 4 tablespoons Gram flour (besan)
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- ½ teaspoon Fenugreek seeds (methi dana)
- a pinch Asafoetida
- 1 large Onion chopped
- 1 teaspoon Ginger paste
- 3 Green chillies chopped
- ¼ teaspoon Turmeric powder
- ½ teaspoon Red chilli powder
- to taste Salt
- 1 teaspoon Sugar
Method
- Whisk together the yogurt, gram flour and three cups of water till smooth.
- Heat the oil in a non-stick pan, add the cumin seeds and fenugreek seeds. When the seeds begin to change colour, add the asafoetida and onion, and sauté for two minutes.
- Add the ginger paste and green chillies, and sauté for half a minute. Add the turmeric powder, chilli powder and spinach, and sauté for two minutes.
- Add the yogurt mixture and bring to a boil. Add the salt and sugar, lower the heat and simmer for ten to fifteen minutes, or till the kadhi thickens. Serve hot.
