How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Nutriwale Chawal - SK Khazana Recipe

  • Basmati rice soaked for 15 minutes 1 cup

  • Soya granules 1 cup

  • Milk 1 cup

  • Ghee 3-4 tablespoons

  • Cinnamon 1 inch

  • Green cardamoms 6

  • Cloves 3-4

  • Cumin seeds 1/2 teaspoon

  • Medium onions chopped 3

  • Ginger paste 1 tablespoon

  • Garlic paste 1 tablespoon

  • Green chillies chopped 2-3

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Medium tomatoes chopped 2

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespo to garnish

  • Garam masala powder 1/2 teaspoon

Method

Step 1

Take the soya granules in a bowl, add milk and let them soak for 15-20 minutes.

Step 2

Heat ghee in a thick bottomed pan and add cinnamon, cardamoms, cloves and cumin seeds, sauté till colour changes.

Step 3

Add onions and sauté till golden brown. Add ginger paste and garlic paste, mix well and sauté for 2-3 minutes.

Step 4

Add green chillies, turmeric powder, coriander powder, red chilli powder, mix well and sauté. Add tomatoes and salt, mix well and sauté till tomatoes turn pulpy.

Step 5

Add soaked soya granules and mix well. Cover and cook till dry.

Step 6

Drain and add rice, mix and sauté for 2 minutes. Add 1½ cups water and mix well. Add garam masala powder and coriander leaves and mix well.

Step 7

Cover and cook on low heat till rice is done. Stir once or twice while rice is cooking.

Step 8

Transfer into a serving bowl, garnish with coriander leaves and serve hot.
