Ingredients list for Kumbh Pulao
- 20-25 Button mushrooms halved
- 1 1/2 cups Basmati rice soaked for ½ hour
- 2-3 tablespoons Ghee
- 6-8 Green cardamoms
- 4-5 Cloves
- 1 inch sti Cinnamon
- 1/2 teaspoon Cumin seeds
- 1/2 teaspoon Caraway seed (shahi jeera) powder
- 2 Onion
- 6-8 cloves Garlic
- 1 inch piece Ginger
- 1/2 teaspoon Red chilli powder
- 1/4 cup Turmeric powder
- 1 cup Yogurt
- 1/4 teaspoon Green peas
- 1/2 teaspoon Garam masala powder
- to taste Salt
Method
- Heat ghee in a handi. Add green cardamoms, cloves, cinnamon, cumin seeds, caraway seeds and sauté till fragrant.
- Finely slice onions and add. Chop garlic and add. Finely chop ginger, add and sauté.
- When onions turn light brown, add mushrooms and mix well.
- Add red chilli powder, turmeric powder and sauté. Add yogurt and mix well. Add 2 cups water and mix well.
- Add rice and mix well. Add green peas, garam masala powder, salt and mix lightly. Cover and cook till the rice is done.
- Serve hot.
