Ingredients list for Kathiawadi Vada
- 2 cups Wheat
- Rice
- 1 cup Rice
- 1/4 cup Split black gram skinless (dhuli urad dal)
- 1/4 cup Split green gram skinless (dhuli moong dal)
- 1/4 cup Split Bengal gram (chana dal)
- 2-3 Green chillies
- 1 inch piece Ginger
- to taste Salt
- a pinch Soda bicarbonate
- 1/4 cup Yogurt
- 2 teaspoons Oil
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Sugar
- 1/2 bunch Fresh coriander leaves chopped
- a pinch Asafoetida
- for deep-frying Oil
Method
- Dry grind the wheat, rice and the dals coarsely. Peel ginger, remove the stems of the green chillies and grind them to a paste. Add salt, soda-bi-carbonate, yogurt, oil and little warm water to the flour and make a thick batter. Ferment it for eight to ten hours in a warm place.
