Ingredients list for Chicken Hong Kong
- 400 grams Boneless chicken breast cut into cubes
- 1 tablespoon Oil + to deep fry
- Salt to taste
- Black pepper powder to taste
- 3 teaspoon Cornflour/ corn starch
- 1 Egg
- 2 Spring onions with greens
- 2-3 Dried red chillies
- 1 inch Ginger sliced
- 1 tablespoon Garlic chopped
- 1 tablespoon Red chilli paste
- 1 tablespoon Red chilli sauce
- 1 tablespoon Soy sauce
- ¼ cup + 1 tablespoon Chicken stock
- 1 teaspoon Sugar
- 1 teaspoon Vinegar
Method
- Heat sufficient oil in a deep pan.
- Place chicken in a bowl, add salt, pepper powder and 2 teaspoons cornstarch.
- Break an egg into another bowl and whisk well. Add half egg to the chicken mixture and mix well.
- Slide the chicken cubes into hot oil and deep-fry chicken till golden and crisp. Drain on absorbent paper.
- Halve spring onion bulbs,reserving greens,and separate layers. Diagonally slice dried red chillies and discard seeds.
- To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and saute for 30 seconds. Add garlic, mix and saute on high heat.
- Add sliced dried red chillies, red chilli paste, red chilli sauce, soy sauce, ¼ cup chicken stock and spring onion bulbs, mix well and saute for a minute.
- Add fried chicken, salt, pepper powder, sugar and vinegar and toss to mix.
- Mix remaining cornstarch in 1 tablespoon chicken stock, add to the sauce, mix and cook on low heat for a minute.
- Roughly chop spring onion greens, add to sauce reserving some for garnishing and mix well.
- Serve hot garnished with chopped spring onion greens.
