Ingredients
- 1 medium cabbage, shredded
- 1 large carrot, peeled and cut into thin strips
- 8 white bread slices
- 5-6 spring onion bulbs, sliced
- 5-6 tablespoons chopped spring onion greens
- Salt to taste
- A pinch of black pepper powder
- 8 eggs
- Butter as required
- Castor sugar for sprinkling
- Tomato ketchup for drizzling
Method
- Take cabbage in a bowl, add carrot, spring onion bulbs, spring onion greens, salt and black pepper powder. Break eggs directly into the bowl and mix well.
- Heat some butter on a non-stick tawa, add ¼ cabbage-egg mixture. Cook for 1-2 minutes on medium heat.
- Shape into a square with the help of spatula. Add butter and cook for 3-4 minutes. Baste with butter in between and continue to cook till golden brown.
- Flip and cook the other side for 3-4 minutes as well.
- Push the omelette onto one side of the tawa. Apply some butter on the other side and place 2 white bread slices and apply some butter on top. Toast for 2-3 minutes on both sides.
- Apply some butter on the omelette and cook till golden brown and the cabbage caramelizes.
- To make the sandwich, place the omelette on a toasted bread slice and sprinkle some castor sugar. Drizzle some tomato ketchup and place the remaining bread slice on top.
- Make more omelette sandwiches with the remaining mixture and bread slices.
- Diagonally halve each sandwich, place on a serving plate and serve immediately.
