Ingredients
- 450 grams red pumpkin (bhopla/kaddu),peeled
- 3 medium onions
- 10-15 garlic cloves
- 1 inch ginger
- 5-6 green chillies
- 2 bay leaves
- 7-8 black peppercorns
- 1/2 teaspoon cumin seeds
- 1 tablespoon coriander powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1 teaspoon dried mango powder
- 1/2 teaspoon roasted cumin powder
- Salt to taste
- 2 tablespoons lemon juice
- 2 tablespoons oil
Method
- Cut pumpkin into small cubes and put into a bowl. Cut onions into small cubes.
- Put garlic cloves, ginger and green chillies in a chopper and chop finely.
- Take a rectangular ovenproof glass dish and put pumpkin and onion cubes in it. Put the chopped garlic-ginger-green chillies over it.
- Add bay leaves, black peppercorns, cumin seeds, coriander powder, turmeric powder, garam masala powder, dried mango powder, cumin powder, salt, lemon juice and oil and mix well with two spoons.
- Cook in the oven at 220° C for 8-10 minutes. Reduce the temperature to 180° C and cook for 8-10 minutes more.
- Take it out of the oven and serve hot.
