Ingredients
- 4 eggs
- 8 white bread slices
- Salt to taste
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 green chillies chopped
- 1 small tomato chopped
- 1 small onion chopped
- 1 medium carrot cut into thin strips
- 1 large green capsicum cut into thin strips
- ½ small cabbage thinly shredded
- Crushed black peppercorns to taste
- 1 tablespoon mayonnaise
- 8 teaspoons butter
- Processed cheese as required
- Tomato ketchup to serve
Method
- Break eggs into a large bowl and whisk well with a fork. Add salt, turmeric powder, red chilli powder, green chillies, tomato and onion and mix well.
- Take carrot in another bowl, add carrot, capsicum, cabbage, crushed black peppercorns, salt and mayonnaise and mix well.
- For each sandwich, heat 2 tsps butter on a non-stick tawa and let it melt. Dip 2 bread slices in the egg mixture so that both sides are well coated and place them on the hot tawa.
- Cook for 1 minute and flip. Place a portion of the vegetable filling on one piece of bread and spread it evenly. Grate some cheese over the vegetables and cook for 1 minute.
- Cover with the second slice and press it gently.
- Cook for 1-2 minutes on both sides. Take it off the heat and cut it into triangles.
- Transfer them to a serving plate and serve hot with tomato ketchup.
