Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Aloo Gobhi - SK Khazana Recipe

  • Potatoes peeled and cut into medium cubes 3 medium

  • Cauliflower florets 200 grams

  • Oil 1 1/2 tablespoons

  • Cumin seeds 1 teaspoon

  • Green chillies slit 3-4

  • Onion chopped 3 tablespoons

  • Tomato chopped 3 tablespoons

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Coriander powder 1 1/2 teaspoons

  • Ginger cut into thin strips 1 inch

  • coriander leaves chopped 1 tablespoon

  • coriander leaves for garnish

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds and when their colour changes, add green chillies, mix and saute for 1 minute. Add onion, mix and saute for 2-3 minutes.

Step 2

Add tomatoes, mix and saute for 1 minute. Add salt, mix well, cover and cook till tomatoes soften.

Step 3

Add turmeric powder, red chilli powder, garam masala powder and coriander powder and mix well. Cover and cook for 2-3 minutes.

Step 4

Add potatoes, cauliflower florets, salt and ½ cup water and mix well. Cover and cook for 8-10 minutes or till the vegetables are done.

Step 5

Remove the lid, sprinkle ginger strips and coriander leaves and mix well.

Step 6

Transfer into a serving bowl, garnish with coriander leaves and serve hot with phulkas.
