Ingredients list for Vegetable Nuggets - SK Khazana

  • 1 cup Potatoes boiled, peeled and grated
  • 3/4 cup Cauliflower grated
  • 1/4 cup Green capsicum finely chopped
  • 1/4 cup Carrots finely chopped
  • 1/4 cup French beans finely chopped
  • 1/4 cup Fresh coriander leaves finely chopped
  • 1/4 cup Dried breadcrumbs
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chaat masala
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala powder
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • to taste Black peppercorns crushed
  • 2-3 tablespoons Cornflour
  • for deep-frying Oil
  • for coating Panko breadcrumbs
  • to serve Tomato ketchup

Method

  1. Mix together potatoes, cauliflower, capsicum, carrots, French beans, coriander leaves, breadcrumbs, cumin powder, chaat masala, coriander powder, garam masala powder, chilli powder, salt and crushed peppercorns in a bowl.
  2. Divide the prepared mixture into equal portions and shape into nuggets.
  3. Mix together cornflour and water as required into thin slurry.
  4. Heat sufficient oil in a kadai.
  5. Dip the nuggets in slurry and coat with panko breadcrumbs.
  6. Deep-fry nuggets in hot oil till golden brown. Drain on absorbent paper.
  7. Arrange the nuggets on a serving platter and serve hot with tomato ketchup.
