Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Seekh Kebab Masala-SK Khazana Recipe

  • Seekh Kebab cut into 1 1/2 inch pieces 5-6

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Large onion finely chopped 1

  • Green chillies chopped 2

  • Ginger-garlic paste 1 tablespoon

  • Medium tomato finely chopped 1

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 teaspoon

  • Yogurt 2-3 tablespoons

  • Browned onion paste 1 1/2 tablespoons

  • Cashewnut paste 1 tablespoon

  • Garam masala powder 1 teaspoon

  • Lemon juice 1/2 teaspoon

  • Fresh coriander leaves chopped 1 1/2 teaspoons

  • Fresh mint leaves for garnish

Method

Step 1

Heat oil in a non-stick pan. Add cumin seeds and onion and sauté till onion turns a golden brown.

Step 2

Add green chillies and ginger-garlic paste, mix and sauté for 2 minutes. Add tomato, mix and sauté till tomato becomes pulpy.

Step 3

Add red chilli powder, turmeric powder and coriander powder, mix and sauté till oil separates.

Step 4

Add ¼ cup water and mix well. Add yogurt and mix well. Add salt and mix.

Step 5

Add browned onion paste and mix well. Add cashewnut paste and mix well and sauté for 1-2 minutes.

Step 6

Add ½ cup water and mix. Add seekh kebab pieces, garam masala powder, lemon juice and coriander leaves and mix well. Simmer for 2-3 minutes.

Step 7

Garnish with mint leaves and serve hot.
