Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Jhatpat Aloo Ki Sabzi Recipe

  • Potatoes peeled and cut into 1 inch pieces 4 medium

  • Onions roughly chopped 2 medium

  • Tomatoes roughly chopped 2 medium

  • Ginger roughly chopped 1 inch piece

  • Green chillies 2

  • Garlic 6 cloves

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Cumin powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Coriander powder 2 teaspoons

  • Salt to taste

  • Fresh cream 1 tablespoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Ginger cut into thin strips 1 inch piece

Method

Step 1

Grind onions, tomatoes, ginger and garlic cloves to a smooth paste.

Step 2

Heat oil in a pressure cooker, add cumin seeds and as they begin to change colour add the paste and sauté till oil separates.

Step 3

Add potatoes, turmeric powder, cumin powder, red chilli powder and coriander powder and sauté for two minutes.

Step 4

Add salt and mix.Add four cups water and stir.

Step 5

Once the water comes to a boil, close the lid of the cooker and cook under pressure till the pressure is released thrice (3 whistles).

Step 6

Open the lid once the pressure is completely reduced.

Step 7

Add fresh cream and coriander leaves and mix well.

Step 8

Garnish with ginger strips and serve hot with rotis.
