Ingredients
- 2 medium potatoes, boiled, peeled and mashed
- 2 medium tomatoes, chopped
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 8 curry leaves
- 5 garlic cloves, chopped
- 1 inch ginger piece, chopped
- 1 medium onion, chopped
- 1/4 cup chopped spring onion
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons Fresh coriander leaves chopped
Method
- Heat oil in a non stick pan, add cumin seeds, mustard seeds, curry leaves and crushed garlic, Saute till light brown. Add green peas and tomatoes and sauté well.
- Add cumin powder, coriander powder, turmeric powder, sambar powder and salt. Mix well and add little water.
- Heat oil in a non stick pan, add cumin seeds and curry leaves. Saute till seeds splutter. Add garlic, ginger, onion and spring onions. Saute till light brown.
- Add cumin powder, coriander powder, garam masala and tomatoes. Saute for two minutes. Add mashed potatoes, salt and one cup water. Mix well. Allow the mixture to boil. Garnish with coriander leaves and serve hot.
