Tomato Rice Tomato Rice is a famous South Indian recipe. It is very delicious and an easy to prepare dish. Pureed tomatoes are sauteed with spices and then added to rice. This recipe works as a perfect one pot meal. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Medium tomatoes, Kolum rice Cuisine South Indian Course Rice Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Tomato Rice 3-4 Medium tomatoes roughly chopped 2 Kolum rice soaked 1 tablespoon Oil 1 teaspoon Cumin seeds 1 cup Bottle gourd cut into cubes 1 Medium potato cut into cubes to taste Salt 1 Green chilli slit 2 teaspoons Ghee to serve Raita to serve Papad Method Heat oil in a pressure cooker, add cumin seeds and sauté till they change colour. Add bottle gourd and potato, mix and sauté for a minute. Add tomatoes, mix and sauté for 1-2 minutes. Add salt and green chilli, mix well and saute for 2-3 minutes. Add rice and mix well. Add 3½ cups water and mix. Add ghee and mix. Cover the cooker with its lid and cook under pressure till 2-3 whistles are released.
