Ingredients list for Tomato Rice
- 3-4 Medium tomatoes roughly chopped
- 2 Kolum rice soaked
- 1 tablespoon Oil
- 1 teaspoon Cumin seeds
- 1 cup Bottle gourd cut into cubes
- 1 Medium potato cut into cubes
- to taste Salt
- 1 Green chilli slit
- 2 teaspoons Ghee
- to serve Raita
- to serve Papad
Method
- Heat oil in a pressure cooker, add cumin seeds and sauté till they change colour.
- Add bottle gourd and potato, mix and sauté for a minute. Add tomatoes, mix and sauté for 1-2 minutes.
- Add salt and green chilli, mix well and saute for 2-3 minutes. Add rice and mix well. Add 3½ cups water and mix.
- Add ghee and mix. Cover the cooker with its lid and cook under pressure till 2-3 whistles are released.
- Transfer into a serving bowl and serve hot with raita or yogurt or with papad and pickle.
